Make your own kombucha at home
At YAYA Kombucha we used to offer a kombucha starter kit, a simple way to get started with brewing your own kombucha at home. While we no longer sell the kit, we still want to share our recipe and tips so you can start fermenting yourself!
You can easily find the ingredients you need online or at local (organic) stores. To make about 1 liter of kombucha, you’ll need:
- 100 ml of liquid kombucha starter (unpasteurized kombucha from a previous batch or a store-bought raw kombucha.
- A certified organic SCOBY (symbiotic culture of bacteria and yeast)
- Tea and sugar (for the base)
- A glass jar and breathable cloth (for fermentation)
How to make kombucha
Making kombucha is simple and rewarding. Follow these steps:
- Make a strong, sweet tea.
- Add the SCOBY and starter liquid (sour kombucha) to the tea.
-
Let it ferment at room temperature for 10–14 days.
During fermentation, the sugars are converted by the yeast and bacteria into acids, creating that characteristic tangy kombucha flavour.
After about two weeks, your kombucha is ready to enjoy!
Want to keep brewing? Use some of your finished kombucha as a starter liquid for your next batch. A slightly sour starter makes an even better foundation for a new brew.
