Back in 2017, when Tom and Charlotte were experimenting with new flavours, a Japanese citrus fruit called yuzu caught their attention. Bright, aromatic, and unlike anything they had tasted before.
That first batch was meant to be a one-off experiment, a curious twist on tradition. But the result was undeniable: crisp, fragrant, and full of energy. What started as a trial quickly became a signature. By 2019, YAYA Kombucha Yuzu earned a permanent place in the YAYA lineup and it’s been one of our most loved flavours ever since.

Yuzu is a rare Japanese citrus, cherished for its deep aroma and layered flavour, a blend of grapefruit, lime, and mandarin. But for us, yuzu is more than an ingredient; it represents everything we care about: craft, culture, and connection.
While many discover yuzu as a fleeting trend, we discovered it through curiosity and brewed it with respect for its origin. It’s the kind of flavour that converts skeptics and reminds people what real kombucha can taste like: bright, clean, and full of life.

How we make it
Every can of YAYA Kombucha Yuzu begins with our signature base: organic green and black teas, raw cane sugar, and a living SCOBY culture. The kombucha is wild fermented slowly to develop its natural balance of acidity, fizz, and depth, the foundation of our craft.
Once the brew reaches the perfect balance, we blend in organic Japanese yuzu juice sourced directly from small family-run orchards. Each batch is carefully crafted to capture the same quality and authenticity that defined our early days, small-scale, intentional, and true to our roots.

Charlotte’s journey to Japan
In April 2025, Charlotte travelled to Kyushu and Shikoku, Japan, the heartlands of yuzu. She met the farmers behind our fruit, walked their orchards, and shared stories over cups of fresh-pressed juice.
That visit wasn’t just about sourcing. It was about understanding the people and the places behind every can of YAYA Kombucha Yuzu and building relationships that honour the craft at both ends of the process.
